Summer Salads and My Chinese Chicken Crunchy Salad

I found these delicious on my favorite site Pinterest! 

Eating lighter in the summer time is great, and making light flavorful salads has so many options, using fruits and fresh vegetables.  There are always family favorites, 
potato, pasta all vegetable and fruit or a combination.

One of my favorite has been "Chinese Chicken Salad" with a Crunch made with Ramen noodles, toasted almonds and sesame seeds, with cut up chicken and cabbage. 















I use 1 bag of coleslaw mix or you can use 1 head of napa cabbage, shredded thinly sliced
2 packages of Ramen noodles crushed, saving back 1 packet of the chicken flavoring to make dressing. 
4 green onions thinly sliced
1/4 cup cilantro leaves, I use a little less
2 cups chicken breasts, shredded or cubed
*3 TBSP. toasted sliced almonds 
*2 TBSP. Sesame seeds

To make the dressing: 
4 TBSP sugar
1/4 cup of mild flavor light oil like olive or sesame oil. 
1/2 Tsp. fresh ground pepper
6 TBSP rice vinegar

Putting it all together:
Combine salad ingredients in a large bowl
Mix all dressing ingredients and 1 Ramen noodle seasoning packet and pour over salad.
Refrigerate overnight or several hours.

**For toasting almonds and sesame seeds I use a small fry pan, no oil.  On medium heat add the almonds, shake the pan slowly to toast. Set aside to cool ad then do the same with the sesame seeds.
