A Story of Staying 39 for 3 Years!
I had been fibbing and forgot, to my surprise when I had to grab "3" years, that made me 42!! I did... not... like that, so from that day forward, I vowed not to "ever" fib about my age again, so now, I take each year with pride. I figure I deserve everyone and its better to take each year one at a time.

Summer Salads and My Chinese Chicken Crunchy Salad

Eating lighter in the summer time is great, and making light flavorful salads has so many options, using fruits and fresh vegetables. There are always family favorites,
potato, pasta all vegetable and fruit or a combination.
One of my favorite has been "Chinese Chicken Salad" with a Crunch made with Ramen noodles, toasted almonds and sesame seeds, with cut up chicken and cabbage.
I use 1 bag of coleslaw mix or you can use 1 head of napa cabbage, shredded thinly sliced
2 packages of Ramen noodles crushed, saving back 1 packet of the chicken flavoring to make dressing.
4 green onions thinly sliced
1/4 cup cilantro leaves, I use a little less
2 cups chicken breasts, shredded or cubed
*3 TBSP. toasted sliced almonds
*2 TBSP. Sesame seeds
To make the dressing:
4 TBSP sugar
1/4 cup of mild flavor light oil like olive or sesame oil.
1/2 Tsp. fresh ground pepper
6 TBSP rice vinegar
Putting it all together:
Combine salad ingredients in a large bowl
Mix all dressing ingredients and 1 Ramen noodle seasoning packet and pour over salad.
Refrigerate overnight or several hours.
**For toasting almonds and sesame seeds I use a small fry pan, no oil. On medium heat add the almonds, shake the pan slowly to toast. Set aside to cool ad then do the same with the sesame seeds.

Fun Summer Watermelon Pie
Pineapple Oatmeal Bars Recipe
These Pineapple bars are delicious and have just a bit of tartness, sometimes I just want something that is not so sweet. They keep well, unless you have kids around then they disappear quick!

Ingredients
- 1 (20 ounce) cans crushed pineapple ( Do NOT drain)
- 1 cup sugar
- 3 1/2 tablespoons cornstarch
- 1 3/4 cups oatmeal
- 1/4 teaspoon salt
- 1 cup brown sugar
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 3/4 cup butter or 3/4 cup margarine, softened
Directions
- For the filling, combine the sugar and cornstarch in a saucepan and mix well. Add the pineapple and its juice, and cook over medium heat until thickened, stirring constantly. Cool.
- For the crust, combine oatmeal, salt, brown sugar, flour, and baking powder together. work in butter until mixture is uniform.
- Reserve 1 1/4 cup of crumb mixture, and press the rest into an ungreased 9 x 13 pan, working up edges just slightly to help hold filling off of the edge of the pan.
- Pour filling over oatmeal mixture and spread evenly.
- Sprinkle reserved crumbs evenly over filling.
- Bake at 350 for 20 minutes. cool and cut into bars.

Fast and Fresh Strawberry Pie
3 quarts (about 3 pounds) fresh strawberries, rinsed and hulled
1 cup sugar
1 Tbs. powdered pectin (Sure Jell)
Pinch salt
3 Tbs. cornstarch, dissolved in ¼ cup of water
1 Tsp. finely grated lemon zest
½ Tsp. vanilla extract
1 pre-baked pie shell
1 cup sugar

Slice 1 heaping quart of the strawberries for the filling and halve 2 heaping cups of your best-looking ones for the pie top. Halve another 2 cups of strawberries, place in a food processor and puree until smooth.
Measure out 1¼ cups of the puree and transfer to a medium saucepan along with sugar, pectin and salt. Bring to a simmer over medium heat, whisking frequently. Continue to simmer so that mixture foams, about 1 minute longer. Remove from heat; skim foam from surface. Return saucepan to medium heat, slowly whisking in cornstarch mixture. Continue to whisk until mixture is stiff. Stir in lemon zest and vanilla.
Transfer ¼ cup of the mixture to a small bowl. Whisk in up to 2 tablespoons of water for the glaze. Transfer remaining mixture to a medium bowl, placing a sheet of plastic wrap directly on the surface. When mixture has cooled to room temperature, stir in sliced strawberries and turn into baked pie shell. Arrange halved strawberries over top; brush with glaze and refrigerate until ready to serve. (The pie can be made several hours ahead.)
Yield: 6 servings
Per serving: 265 calories, 44g carbohydrates, 4g protein, 9g fat (3g saturated), 0mg cholesterol, 6mg fiber, 142mg sodium
